My Discovery

Ever since I first stumbled across my first air fryer, I’ve been playing around with a zucchini and feta fritters recipe, trying to see what is the tastiest combination is for these crispy, bite-sized snacks. Through trial and error, I’ve finally come up with the best recipe that gives you the juiciness from the zucchini but still includes the crispy texture that everyone loves.

Naturally, in order to get the crispy crust, you’d usually use a lot of oil, but with the air fryer, I was able to cut the oil drastically whilst still achieving the same texture and taste. You get a tasty meal but you don’t need to worry about the oil and fat that comes with deep frying them.

Zucchini and Feta Fritters are a great spring, summer and fall dish if you’re looking to add a little zest into your meals. If you’re not into cooking for hours, and honestly who is, then these fritters won’t waste any of your time. These fritters pair perfectly with a tasty Greek salad and a fresh dipping sauce.

Instructions

Step 1

PREHEAT AIR FRYER

Preheat the air fryer to 390°F (200°C) for 4 minutes.

Step 2

GRATE THE ZUCCHINI

Grate the zucchini into a large bowl. After, take the grated zucchini and place it into a kitchen towel, squeezing out the moisture as much as possible. Discard the liquid.

Step 3

Combine ingredients

In the zucchini bowl, place all the ingredients inside except the flour and baking powder. Stir the ingredients together, mixing well.

Step 4

ADD FETA, BAKING POWDER, AND FLOUR

Then, over the mixture, slowly add in the feta, baking powder and flour. Stir until they’re incorporated into the mixture completely.

Step 5

CREATE THE FRITTERS

Take 2 tablespoons worth of the mixture and form it into a patty-like shape. Place it gently into the air fryer basket. You may not have enough space for the entire mixture, so, you may need to cook a couple of batches.

Step 6

SPRAY ON A LITTLE OIL

Once the fritters are in the air fryer, lightly spray oil onto them for a crispy outer layer. Cook them for approximately 7 minutes or until they’re golden brown.

Step 7

LEAVE TO COOL SLIGHTLY & THEN ENJOY!

Remove your fritters and leave them to cool momentarily. Then tuck in!
